If any of you were inclined or in need of hiding books within the Gallows itself, where would you end up storing them?

It seems that there are a number of missing books from the library removed at some point prior to the Inquisition's move-in, and finding them would be useful, even if they're never used again.

Probably, especially with the sea air. So... I'm going to say probably in a floor if it's a hidden space, rather than a wall or ceiling. To much chance of water or other damp getting in.

It's a place to start. Trunks and desks with false bottoms are also likely targets. Not in the wall, away from the elements, and not easily seen - or searched. Desks and trunks have a sense of privacy to them that make people unwilling to initially go through them after all.

It doesn't help that if anything was stolen it could have easily been fenced by now too, so I wouldn't hope for a full recovery of everything lost.
